Ingredients Fine Bulgur for Meatballs: 1 kg (approximately 7.5 cups) Hot Water: 4 cups (for soaking the bulgur) Salt: 1 tablespoon (to be added while soaking the bulgur) Vegetable Oil: 1 teacup Onion: 1 (chopped) Tomato Paste: 4 tablespoons (can be increased optionally) Red Pepper Flakes: 1 teaspoon Black Pepper: 1 teaspoon Pomegranate Molasses: 3 tablespoons Lemon Juice: Juice of 1 lemon Tomatoes: 3 (peeled and chopped) Fresh Onion: 5 sprigs (finely chopped) Parsley: Quarter bunch (finely chopped) Lettuce: 5 sprigs (finely chopped) Gherkins: 7 pieces (diced) Preparation Soak the Bulgur: Place the fine bulgur in a large bowl. Add 1 tablespoon of salt and 4 cups of hot water and mix. Cover the bowl and let it sit until the bulgur absorbs the water. Prepare the Sauce: Heat a pan and add the vegetable oil. Add the chopped onions and sauté until they turn pink. Then add the tomato paste and continue sautéing until fragrant. Finally, add the red pepper flakes and black pepper, sauté a little more, and remove from the heat. Combine the Bulgur and Sauce: Pour the prepared tomato paste sauce over the softened bulgur and mix well. Add the Sourness: Add the pomegranate molasses and lemon juice and mix. Add the Greens and Vegetables: Gradually add the chopped tomatoes, spring onions, parsley, lettuce, and gherkins, mixing all the ingredients together. Finally, check the salt and add more if necessary to taste.
