Trout of the South | Mission to New River - Tasmania (Sea Trout Gravlax Catch & Cook)

It's been my dream to catch Australia's southern most trout for years, and finally I've made it to the south west Tasmanian wilderness to do it. New River Lagoon on the south west track is an arduous hike but a location like no other. The target was to catch sea run brown trout living in the salt water and enjoy it as Gravlax in the Tassie bush.
