For the taro filling: 500g steamed (cooked)taro 25g sugar 30g condensed milk 80 g milk Steam the taro and using a fork mix with the ingredients. Let it cool. (Half of the filling will be enough as needed in this recipe or you can double the dough recipe to use up all the filling) For the dough: 200 g pastry flour 90 g coconut milk + 15 g water mix together 1/2 teaspoon instant yeast 25 g sugar 5 g oil In the mixer, mix the dough until smooth .(around 10 minutes) hand knead the dough repeat kneading and folding a few times to get out all the air pocket from the dough . Cut into 8 pieces . (Safe one piece of the dough to make the ribbon ,adding some dark cocoa powder, sugar, 2 drop off milk ) After shaping , proof in 30~35 C around 40~50 minutes.
