These dishes are perfect for a weekend dawat or a hearty family meal! 📅 Air Date: 2 July 2025 👨🍳 Chef: Mehboob Khan 📺 Show: Mehboob’s Kitchen | Masala TV Malai Kofta Ingredients: Beef Mince ½ kg Onion (finely chopped) 1 Bread Slices 2 Green Chilies (finely chopped) 3 Cloves 4 Black Pepper 4 Green Cardamoms 6 Mint Leaves (finely chopped) ½ bunch Coriander Leaves (finely chopped) ½ bunch Fresh Cream ½ cup Cumin Seeds 1 tsp Ginger (finely chopped) 1tbsp Poppy Seeds 1 tbsp Chickpeas (roasted) 2 tbsp For Gravy: Yogurt 1 cup Oil 1 cup Green Chilies (finely chopped) 2 Onions (finely chopped) 3 Coriander Leaves (finely chopped) ½ bunch Fresh Cream ½ packet Turmeric 1 tsp Allspice powder 1 tsp Red Chili Powder 1 tbsp Ginger Garlic Paste 1 tbsp Coriander Powder 2 tbsp Salt to taste Method: For Koftas: Grind roasted chickpeas, cumin, green cardamoms, black pepper, poppy seeds and cloves. Now add this ground spices to Mince, add fresh cream, mint leaves, coriander leaves, onion, ginger, green chilies and salt. Mix well and make small balls. For gravy: Heat oil in a pan and fry onions till they turn golden. Remove it on a newspaper and wait for it to turn crisp. Crush it with your hand and mix it in yogurt. Add red chili powder, turmeric, ginger garlic paste, ground all spice, coriander, salt and green chilies . Mix all well and slightly cook it. Add yogurt to it. Spread Fried Koftas in it. When oil start appearing on top, add fresh cream and leave it to simmer on low flame. Lastly add coriander leaves and serve hot with rice or roti. Mango Chutney Ingredients: Raw Mangoes (peeled & chopped) 2 cups Sugar 1 cup Red Food Color a pinch Nigella Seeds (kalonji) 1 tsp Salt 1/3 tsp Water 1 cup Method: Place all the ingredients in a pan, bring it to boil and cook on low flame for 15 minutes. Remove from stove and store in a air tight container. Masalay Walay Chops Ingredients: Lamb chops 1 kg Oil as required Ingredients for marination: Vinegar ½ cup Yogurt 2 cups Salt to taste Red chili 1-1/2 tsp Whole coriander 2 tbsp Cumin seeds 1 tbsp Oregano 1 tsp Bell pepper 1 Tomatoes 3 Sugar 1 tsp Carom seeds ½ tsp Garlic paste 1 tbsp Ginger paste 1 tbsp Ingredients for decoration: Green coriander as required Green chilies as required Lemon as required Method: Cover the chops with vinegar and let them rest for atleast 15 minutes. Then wash the chops to remove extra vinegar. Now add red chili, salt, coriander seeds, carom seeds, cumin seeds, oregano, bell pepper, tomatoes, sugar, garlic and ginger into a processor and grind until it becomes smooth paste. Then add this paste to the yogurt and pour this over the chops make sure they all are covered and let them sit for 15 minutes. Now heat oil in pan and fry onion until golden brown then add chops with all the yogurt then cook on low flame first then cook on high flame until chops are fully cooked and soft. The gravy should be less and thick.
