Most people come to Kuanzhai Alley (宽窄巷子) in Chengdu expecting souvenir shops and tourist restaurants. But hidden inside one of Chengdu's beautifully restored historic courtyard houses is a restaurant doing something completely different. My local friend brought me here to experience a refined side of Sichuan cuisine—one that preserves rare banquet dishes and traditional recipes with modern techniques. From the iconic Chicken Tofu Flower (鸡豆花) and Supreme Broth Cabbage (开水白菜) to Tibetan pork, hand-torn yak, Gong Bao shrimp, Twice-Cooked Pork with the legendary Zhangshugang chili, and Dan Dan noodles, this meal showcased a side of Sichuan food that many visitors—and even locals—never get to experience.
