First up is "Hanayome." Just one day of ripening dramatically increased its sweetness and aroma, resulting in a truly juicy peach! And then there's "Hatsuhime," the Fukushima original variety that I was most looking forward to trying for the first time... Honestly, I was completely blown away. I was speechless. My preconceived notion that early-ripening varieties, with their short flowering-to-harvest period, tend to be less sweet (like the Beni Sayaka cherry) was shattered with just one bite. Fukushima Prefecture is truly amazing for producing such high sugar content and overflowing juice while retaining its firmness at this time of year. Hats off to them!
