A versatile stir-fry for making gravy for lagman, rice, pasta, and mashed potatoes! Ingredients: Tomatoes - 5 kilograms Red peppers - 5 kilograms Red and green peppers - 5 kilograms Onions - 5 pieces Garlic - 4 pieces Celery - 4 bunches Green beans (dzhandu) - 200 grams Vegetable oil - 1 liter Sugar - 5 tablespoons Salt - 6 tablespoons 9% vinegar - 6 tablespoons Hot peppers - 2-3 pods First, let's prepare the ingredients. Blend the tomatoes and make tomato puree (5 liters). Cut the peppers into strips. Cut the garlic into wide, 1-millimeter-thick slices. Cut the celery stalks into strips. Cut the green beans (janda) into strips. Cut the onion into half rings. Chop the remaining celery leaves as desired. !!! Since we can't prepare all the ingredients at once due to the lack of a large pot, we'll cook in two stages, dividing the vegetables into two equal portions. We also need to halve the sugar, salt, and vinegar.!!! Pour 0.5 liters of vegetable oil into a large pot, bring to a boil, and then add the onion. Fry the onion until golden brown. When the onion is cooked, add 2.5 liters of tomato puree. Stir and let the mixture simmer for 20 minutes. After 20 minutes, add 2.5 tablespoons of sugar, 3 tablespoons of salt, and 3 tablespoons of 9% vinegar. Now add 5 kilograms of bell peppers (red and red-green). Mix everything and simmer for 10 minutes. After 10 minutes, add the celery stalks, green beans, and some of the garlic. If you don't have green beans in your region, omit them. The beans are added to the sauce. Simmer the vegetables for another 10 minutes, stirring occasionally. For a piquant flavor, add 1/2 a finely chopped hot pepper. The hot pepper seeds are also added to the sauté. After 10 minutes, add the remaining garlic and the remaining celery leaves. Mix everything well. Reduce the heat to low and simmer the vegetables for another 10 minutes. While the vegetables are simmering, prepare the sterilized jars and lids. Pour the prepared gravy into jars, seal tightly with lids, and store in a cool, dark place. This vegetable gravy contains three main ingredients for a delicious lagman gravy: pepper, garlic, and celery. Now, to prepare the gravy, simply fry the meat and onion until tender and add the prepared gravy. You can also add any winter vegetables to the gravy, depending on your preferences, such as Chinese cabbage, daikon radish, carrots, and potatoes. It's all up to you! Cook to your heart's content!!!
