Ingredients Croissants (makes about 12): • Strong flour — 500 g • Salt — 12 g • Sugar — 55 g • Dry yeast — 12 g • Warm milk — 100 ml • Warm water — 150 ml • Butter 82% — 100 g (for the dough) • Butter 82% — 250 g (for laminating) • Melted butter — 30–40 g (for brushing) • Extra flour — for dusting Filling: • Camembert — 1 wheel (≈250 g) • Thyme — 2–3 sprigs For serving (optional): • Black caviar — 40–60 g • Truffle paste — 1–2 tbsp Dyed eggs: • Eggs — 6–8 pcs • Hibiscus tea — 50 g • Water — 1 L • Egg white — 1 pc • Edible gold leaf — for decoration ⸻ Method 1. Dyed eggs 1. Place eggs in a bowl. 2. Add hibiscus tea. 3. Pour over warm water (1 L). 4. Let sit for at least 10 minutes (overnight is best for a deeper color). 5. Rinse the eggs with water. 6. Place 250 g butter onto parchment. 2. Cover with another sheet of parchment. 3. Roll into a thin flat slab. 4. Chill until firm. ⸻ 4. Laminating the dough 1. Lightly dust the table with flour. 2. Roll out the dough. 3. Place the butter slab in the center. 4. Fold the dough like an envelope. 5. Roll and fold several times. 6. Roll into a thin sheet. 7. Mark and cut into triangles. ⸻ 5. Preparing the Camembert 1. Grease a baking tray with melted butter. 2. Place the Camembert in the center. 3. Make cross-shaped cuts on top. 4. Sprinkle with chopped thyme. ⸻ 6. Shaping the croissants 1. Roll each triangle into small croissants. 2. Cut each croissant in half. 3. Arrange the halves in a circle around the Camembert. 4.
