They are a wild berry with a myriad of resources, capable of providing numerous health benefits thanks to their high vitamin C content. But how can you preserve all their nutritional properties when making homemade blueberry jam or juice? The secret lies in the cooking time. Let's get to work. 👩‍🍳To make blueberry jam, we need 1.5 kg of wild blueberries 350 grams of cane sugar and 150 grams of fructose ⏰Cooking time: 8 minutes (first blanching) and an additional 15 minutes (end of cooking) In a saucepan, combine the blueberries with the sugar and fructose. Bring everything to a boil and cook for about 8 minutes. This is a true blanching of the fruit. Meanwhile, the blueberries will release some juice. Separately, prepare a fine mesh strainer and a bowl. Once the 8 minutes are up, drain everything to separate the juice from the pulp. The liquid portion can be stored separately as blueberry juice, to be used in cold drinks or baked goods. The solid portion will be the base for the rest of our blueberry jam. Next, we blend our pulp. Then, we put the pulp back to cook for about 15 minutes. Then, we'll refine the mixture with a food processor. This will remove any excess peel or seeds, which might not be to everyone's taste.
