Rita Lobo teaches how to make FLUFFY WHITE RICE. #ritalobo #Recipes #PracticalCooking INGREDIENTS 1 cup (tea) of rice 2 cups (tea) of water ½ onion 1 tablespoon of olive oil 1 bay leaf ½ teaspoon of salt PREPARATION METHOD Peel and finely chop the onion. In a kettle, bring a little more than 2 cups (tea) of water to a boil over low heat. Place a medium saucepan over low heat. When hot, drizzle with olive oil and add the onion. Season with a pinch of salt and sauté for about 2 minutes, until softened. Add the bay leaf and mix well. Add the rice and stir well to coat all the grains with the oil for about 1 minute – this helps to keep the rice fluffy after cooking. Measure 2 cups (tea) of boiling water and pour over the rice. Season with salt, mix well, and increase the heat to medium. Do not stir again. Once the water reaches the same level as the rice, reduce the heat and partially cover the pan. Cook until the rice absorbs all the water – to check if the water has dried up, pierce the rice with a fork and gently move some grains from the bottom of the pan; if it is still wet, cook a little longer. Turn off the heat and keep the pan covered for 5 minutes before serving so that the grains finish cooking in their own steam.
