Crunchy Peanut Butter Granola Bars!

Why buy granola bars from the grocery when you can make them in the comfort of your own kitchen in about a half hour? These crunchy, peanut buttery granola bars are the perfect snack with an ice cold glass of milk! They are a filling and wholesome food to eat on the go as well. Wrap them up and put them into backpacks, lunch boxes or even your purse. Add some extras to the bars like cranberries, raisins, chopped nuts or even some chocolate chips. Recipe: 3 cups of old fashioned oatmeal 1 cup crispy rice cereal 1/2 cup (mounded) crunchy peanut butter 1/3 cup honey 2 Tbsp coconut oil 1/2 Tbsp brown sugar 1 tsp vanilla 1/2 tsp EACH table salt & baking soda Preheat oven to 350 degrees and line a 9 x 13 baking pan with parchment paper. Mix peanut butter/coconut oil/honey in a glass measuring cup or bowl and microwave for 30-60 seconds. While wet ingredients are heating, mix oats, salt and soda together in a large bowl. Once the peanut butter mixture has become liquid-y, whisk in vanilla and brown sugar. Combine with dry ingredients and mix thoroughly. Press granola evenly into pan. Use an oiled cloth or napkin to compress. Bake in oven for 20-25 minutes until a deep, golden brown. Cool in pan for 10-20 minutes. Remove from pan while granola is still warm, but firm.
