How to Make Non-Dairy Creamy Garlic Sauce | Gnocchi - Vegan

This recipe is not only delicious, but it's easy! My two favorite things! Anyone you cook this meal for will never ask you those dreaded non-vegan eaters words "is this vegan?"- enter eye roll here. Here is the link to purchase the gnocchi used in this video: https://amzn.to/2LzYmRC Here is the recipe: Vegan Gnocchi in Creamy Garlic Sauce 1 pt grape tomatoes** 2 large handfuls of spinach 2 shallots 1/4 cp minced garlic 3-4 tbs all purpose flour (can sub gf all purpose flour too) 2-2 1/2 cps plant based milk 4 tbsp olive oil 1 tsp Italian seasoning 1 tbs vegan parm *pasta of choice (gnocchi in this video but you can use regular pasta or even gf pasta noodles too - also works with zoodles!) 1. In a steal pan, throw in 3 tbs of olive oil on med-high heat. 2. Once heated, add shallots, garlic, pinch of salt and pepper - fry for 5 mins. 3. Whisk in flour, adding one table spoon at a time until completely incorporated (3 tbs). 4. Slowly add plant based milk - a cup at a time. 5. Add remaining tablespoon of flour, if necessary. 6. Once sauce begins to boil, reduce heat to med-low. 7. Add in spinach, roasted tomatoes** and cooked pasta. 8. Add Italian seasoning, vegan parm and salt and pepper to taste. 9. Serve immediately. Roasting tomatoes Slice all grape tomatoes in half. Toss with a tablespoon of olive oil and a pinch of salt. Place on baking sheet lined with parchment paper and bake for 20 mins at 375.
