Let them soak for a while. Drain the sweet potatoes and dry them well. Place the sweet potato sticks in a bowl, sprinkle with salt, a drizzle of oil, and all the spices, and mix well. Preheat the fryer to 205º for 5 minutes, if you have a single-heat fryer. Add the sweet potatoes to the fryer bowl and set to 130°C for 10 minutes. Once the time is up, stir or shake the bowl to combine the sweet potatoes and set to 180°C for 12-15 minutes. Stir halfway through. Keep an eye on them to see how browned you want them. Once the last setting is complete, check that they're cooked through or set them for a few more minutes. Serve with barbecue sauce and yogurt sauce (you can also serve it with ketchup).
