Carbonada Criolla en Olla | Receta de Antaño

Today we’re making a Traditional Argentine Beef & Pumpkin Stew, one of those old-fashioned comfort foods that still carries the flavor of home cooking and Argentine patriotic celebrations. This rustic and hearty stew is made with pumpkin, corn, sweet potato, rice, and just a small amount of beef, slowly simmered the traditional way. In this version, we also add dried peaches for that subtle sweet touch found in many old South American country recipes. 🥘 INGREDIENTS (Serves 4–6) • 400 g beef for stewing (about 14 oz / 0.9 lb) • 2 medium onions (about 2 cups chopped) • 1 red bell pepper (about 1 cup chopped) • 2 small tomatoes (about 1 cup chopped) • 500 g pumpkin or squash (about 4 cups cubed) • 2 medium potatoes (about 2 cups cubed) • 1 large sweet potato (about 2 cups cubed) • 1 ear of corn, sliced or kernels removed • 100 g rice (about 1/2 cup uncooked) • 3 dried peach halves • Hot broth or water, as needed • Salt and black pepper, to taste • Paprika and chili flakes, to taste • Fresh parsley, chopped If you enjoyed this recipe, don’t forget to like the video and subscribe to the channel for more traditional Argentine and old-fashioned home cooking recipes.
