Chorizo is a mixture of chopped pork meat, pork fat, salt, whole pepper grains, cinnamon, achiote, and other spices, which produce its characteristic deep red color. It has a slight smoky flavor which makes the dish very flavorful. Chouriço de Goa- Goa Pork Sausages are probably the best pork item India has produced. They are made by curing local pork meat. In the curing process the meat is salted, dried and smoked. The toddy vinegar and spices added create the magical flavor for which the sausages are famed.
