Here is the recipe: Ingredients: Pasta Salad 426g/3 boneless, skinless chicken breast 227g 8 ounces of your Rotini pasta 150g/1 cup cherry tomatoes, halved or quartered 120g/1 cup English cucumber, diced 60g/1/2 cup red onion, finely chopped 60g/1/2 cup yellow bell pepper (sliced into cubes) 60g/ ½ cup green bell pepper (sliced into cubes) 70g/2/3 cup black olives, sliced 150g/ 1 cup of feta cheese 10g/1/4 cup fresh parsley, chopped 110g/ 1 cup Greek dressing (see recipe) or to your taste. Greek dressing/marinade 62g/ 4 tbsp. spicy brown mustard 84g/ 4 tbsp honey 8g/ 2 tsp minced garlic 8g/ 2 tsp oregano 4g/ 1 tsp dried rosemary 2g/ ½ tsp dried thyme or dried ground thyme 220g/1 cup of olive oil 28g/ 2tbsp. lemon zest 56g/ 4 tbsp. lemon juice 220g/1 cup red wine vinegar 4g/ 1 tsp salt 4g/ 1 tsp black pepper Instructions: Prepare the dressing/marinade In a bow or jar with lid, combine all the ingredients for the marinade/dressing and blend. Recipe yields 3 cups of salad dressing/marinade Set aside. Cook the Pasta Bring a large pot of water (10 cups/2400ml) to a boil. Add 6g/ 1.5 tsp of salt Add the pasta and cook according to package instructions until al dente. Drain and rinse the pasta under cold water to stop the cooking process. Set aside. Prepare the Chicken (pan-grilled) In a container with lid add chicken, Greek marinade/dressing (1 cup approx..) and combine. Should be placed in the refrigerator to marinate for 30 minutes. In a large grill pan, sprayed with non-stick product, over medium-high heat. Add the chicken to the grill pan for 5-6 minutes on each side, until the chicken reaches 165F/74C. Remove and allow chicken to rest before cutting it into bite-size pieces. Cover and set aside. Build the Salad In a large bowl, combine the cooked pasta, cherry/grape tomatoes, cucumber, red onion, black olives, and bell pepper. Add the chicken pieces and feta cheese. Pour the dressing over the salad (1 cup approx..), add the chopped parsley and gently toss to combine, ensuring all ingredients are well coated. Add salt and pepper if needed. Chill and Serve Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
