Time Codes: ----------------- Black Pudding Chorizo - 1:40 Refried Beans - 6:24 Assemble & Wrap - 9:56 Recipe: ----------------- Step 1: Black Pudding Chorizo Ingredients Wet pigs blood Diced Pork Back Fat ¼ large onion diced Oats Pepper Salt 1 Toasted and Soaked Ancho Chili 2 Toasted and Soaked Guajillo chilies 2 cloves garlic 1 Tbsp vinegar 1 tsp dried oregano Water 1) Sweat diced fat and onions in a pan and set aside. 2) Add oats, onions, and back fat to blood and mix well. 3) Add soaked chilies, water, garlic, oregano, vinegar and salt to a blender and blend into a puree. 4) Mix together chorizo puree and black pudding. Sautee in a pan for about 8 minutes. Equipment Large Mixing bowl Small sautee pan Vitamix Large sautee pan Step 2: Refried English Beans Ingredients 3 Cans Great Northern Beans 2 Cups Chicken Stock 1 Cup Water 2 tsp Worcestershire ¼ cup Ketchup 2 Tbsp Tomato Paste ¼ cup Brown Sugar 1 tsp Salt ½ tsp black pepper ½ tsp onion powder ½ tsp garlic powder Cornstarch slurry Lard 1) Add all ingredients except beans and cornstarch slurry to a pot. Mix well and then add beans and bring to a boil. Turn heat to low and simmer for 25 minutes, stirring occasionally. 2) Thicken with cornstarch as needed and add extra seasoning as needed. 3) Toss finished beans in a pan with lard and mash. Equipment Large Stock Pot Wooden Spoon Step 3: Assemble and Wrap Ingredients Black Pudding Chorizo Refried English Beans Eggs Tomatoes Mushrooms Cooked Sausages Cooked Bacon Big Tortillas 1) Fry up eggs, mushrooms and tomatoes.
