Today, we'll prepare a succulent lamb shank, larded with a fragrant trio: garlic, rosemary, and anchovy. Why anchovy? Don't be put off by the fishy flavor. During the roasting process, the anchovy dissolves, imparting a deep umami flavor and additional saltiness to the meat, making the texture more tender. Combined with the pine aroma of rosemary and the spiciness of garlic, you get a culinary masterpiece of Mediterranean cuisine. 📝 Ingredients: For the main course, we'll need simple but high-quality ingredients: 🔸 Lamb shank (whole) 🔸 Garlic - several large cloves 🔸 Rosemary - fresh sprigs 🔸 Anchovy - fillets in oil 🔸 Olive oil - for greasing 🔸 Salt and pepper - to taste For the salsa verde sauce: The green sauce perfectly complements fatty meats, adding acidity and freshness. 🔸 Parsley or cilantro - 1 bunch 🔸 Mint or tarragon - 1 bunch 🔸 Anchovy - 1 fish 🔸 Gherkins - 1 small cucumber 🔸 Capers - 1 tsp 🔸 Red wine vinegar - 1 tsp 🔸 Olive oil - 2 tbsp 🔸 Mustard - 1 tsp 🔸 Garlic - 1 small clove 🔸 Ground black pepper - to taste 🔸 Chili - optional, to taste (for spiciness) 🔸 And, of course, a good mood is a necessary, but lightweight, ingredient 😊 👩🍳 Step-by-step preparation 1. Preparing the meat ✓ Thoroughly wash the lamb shank and pat dry with paper towels. Take a sharp knife and make deep slits all over the meat. The slits should be about 3-4 cm apart. These slits will become "pockets" for our flavorful filling. ✓ Drizzle the prepared shank with olive oil, spread it evenly with your hands, then season with salt and pepper on all sides. 2. Preparing the filling ✓ Peel the garlic and slice it lengthwise into wedges. Cut the anchovy fillet into 1–1.5 cm long pieces. Carefully tear the rosemary into small sprigs that fit the holes in the meat. ✓ Now comes the most creative part. Combine one piece of anchovy, one clove of garlic, and a sprig of rosemary. Carefully place this composition into the holes you made. Try to push the filling deep enough so that it remains inside during baking. In this way, stuff the entire leg of lamb. 3. Baking ✓ Preheat the oven to 180 degrees Celsius. Place the stuffed leg of lamb on the rack so that it bakes on all sides. Place a roasting pan under the rack and add a little water or broth to the bottom of the pan (this will make the meat more tender, and will prevent the drippings from the lamb from burning). ✓ Place the meat in the oven for about 1.5 hours. Time may vary depending on the size of the shank. A kitchen thermometer is ideal. The internal temperature of the meat should be between 60 and 80 degrees Celsius: 60°C for rare, which will leave the meat pink and very juicy. 80°C for well done. 4. Making the salsa verde sauce While the meat is cooking, let's make the sauce. ✓ Place all the salsa verde ingredients (herbs, anchovy, gherkin, capers, vinegar, oil, mustard, garlic, spices) in a food processor. ✓ Blend until desired consistency: some prefer a smooth sauce, others like it with bits of herbs. You can also finely chop all the ingredients by hand. ✓ Transfer the finished sauce to a bowl and let it sit for 10-15 minutes. This allows the flavors of the garlic, herbs, and vinegar to meld. ✅ Serving ✓ After removing the lamb from the oven, don't rush to cut it. Let the meat rest covered in foil for 10-15 minutes. This will allow the juices to distribute evenly throughout the grain, preventing them from leaking onto the cutting board. ✓ Slice the meat and serve hot, generously drizzled with salsa verde.
