Poached Eggs: Bring water to a simmer, add vinegar and salt. Crack each egg into a small cup or ramekin. Submerge the cup almost completely in water and gently drop egg in. Lower heat immediately and let cook for 1-2 minutes, basting with water. Remove with slotted spoon, drain on kitchen towel, season with salt, and serve. 2. Sunny Side Up: Heat butter in pan over medium heat. Pour eggs in gently. Season with salt and pepper, especially the yolk.
