It's a dough that works for everything: from pizza to bread, to sandwich bread, to mini pizzas. And you can also make it with whole wheat flour. I'll steam the bread, fry it, and pan-fry it. Time: 3 hours, difficulty: 3/5, vegan, lactose-free Ingredients for 9 small rolls Type 1 flour 430 g Room temperature water 280 ml Fresh brewer's yeast, half a cube Salt 4 g EVO oil 3 tablespoons You can also use type 2 flour or whole wheat flour, adding 20 ml more water. Place the flour in the center of a bowl and make room in the center. Pour in the water and crumble the yeast. Use a fork to dissolve the yeast in the center of the flour, creating a sort of cream. Wait 5 minutes for the yeast to activate, add the salt and oil, and knead, mixing well. Finally, use your hands to knead. If the dough is too runny, add 2 tablespoons of flour, but don't overdo it; the dough should remain slightly soft and elastic. Wait 10 minutes for the gluten to begin working, then give it a final quick knead. Shape into a ball and leave it in the center of the bowl to rise. Cover the bowl with a lid and wait at least an hour, but not too long: it should only increase slightly, almost doubling in size. Once risen, tip the dough out onto a floured surface. Use a scale to create 9 balls of 70 g each. Roll them up tightly and place them on 8 x 8 cm parchment paper squares. Place everything on a baking sheet and let rise for half an hour, covered with a light cloth. To steam, fill a 1 cm pot with water. Place a steamer sieve or a steamer basket over it. When it boils, place the paper squares with the risen ball on top, spaced apart in the steamer. Cover with a lid and cook for 16 minutes. To cook in the fryer, arrange the dough in the same way and cook on the normal fryer setting at 185°C for 16 minutes. But remember to flip the bread halfway through cooking for optimal cooking. To cook bread in a pan, you don't have to do that paper towel thing; instead, place it directly on a baking sheet. Lightly press the balls to create a focaccia-like shape and cook at medium heat in a heavy steel pan for 16 minutes, turning the bread a couple of times but keeping the lid on.
