Place the potatoes in 1.5 liters of cold, salted water. Bring the water to a boil and cook the potatoes until tender. Drain the potatoes in a colander, return them to the pot, and let them steam briefly. Meanwhile, bring the milk to a boil in a saucepan and dice the butter. Press the potatoes through a potato ricer or mash them with a whisk in the saucepan (see video). Add the butter to the potatoes and pour the hot milk over them, then whisk everything briefly and vigorously.
