Quick Easy Korean Cold Spicy Noodles AKA Bibimguksu

A LOT of food items claim to be 'Korean Style' these days. Those words are all over supermarkets, restaurant and pub menus... I had a noodle bowl from Yo! Sushi and frankly it was a bit terrible. Why can't they do proper Korean cold spicy noodles aka bibimguksu? It's not hard and perfectly summery. You can swap in all sorts of sauce ingredients. The key thing is gochujang. And overall it must be spicy, sweet and aa bright red as possible. A bit of acidity and umami also help. It was my first time trying Yondu and I think I'm going to be a big fan. It's traditional to top with thinly sliced cucumber or pear, so I used both. And boiled egg which I swapped for avocado to keep things planty. An extra drizzle of sesame oil and sprinkle of toasted geem or nori might have been nice.
