Jamaican Ginger Cake

This is my CopyCat recipe of that very famous McVities Jamaican Ginger Cake we all loved years ago and so many still do. In fact this has been the most requested recipe since I started on YouTube. It's so soft, sticky and unctuous one couls most eat the whole thing. It's also delicious served as a pudding with lashings of home made creamy custard.
