Aguapanela, una visión moderna de la cocina colombiana en Madrid

July 14, 2022. We visited the Aguapanela restaurant in Madrid (Calle San Marcos 26) as part of our series "From Potato to Chili Pepper." We spoke with its owner, Harvin Orozco, who told us about Colombian cuisine, highlighting its fruits and vegetables. Harvin told us about the origins of the restaurant's idea, which sought to convey a more modern image of Colombia. They aspire to maintain their direction and flavors. Finally, they explained how to prepare the "posta cartagenera" (a typical dish of Cartagena), one of the most characteristic dishes on their menu. In the audiovisual series "From Potato to Chili Pepper," we take a journey through the gastronomy and typical products of Latin America. It is a round-trip cuisine that has traveled from Spain to the Americas and returned full of influences. We visit restaurants and chefs from different countries to learn more about the typical foods of this cuisine and to discover the stories of talented chefs whose dishes are succeeding in Spain.
