Moist Carrot Cake with Cream Cheese Frosting This is carrot cake is soft, perfectly spiced, and incredibly moist thanks to freshly grated carrots, toasted pecans, and a hint of orange zest. Filled with cream cheese frosting and an optional caramel filling, it's perfect for any occasion. Ingredients • 2 cups (250g) plain flour • 1 tsp baking powder • 1 tsp baking soda • 2 tsp ground cinnamon • 1 tsp salt • 4 eggs • 1½ cups (300g) sugar (or half white, half brown sugar) • 1 cup (240ml) vegetable oil • 1 tsp vanilla • Zest of 1 orange • 3 cups freshly grated carrots • 1 cup toasted pecans, chopped • 1/2 cup pepitas (optional) Method 1 Preheat oven to 160°C fan / 175°C conventional. 2 Sift together the dry ingredients. 3 Whisk the wet ingredients. 4 Fold the dry ingredients into the wet ingredients. 5 Fold in the carrots, pecans, and pepitas. 6 Divide between two lined 8-inch cake tins. 7 Bake on the middle rack for 35–40 minutes, or until a skewer comes out clean. 8 Cool completely before filling with cream cheese frosting.
