Lungro, between the Pollino and the Sibari plains in Calabria, is still remembered today as the town of salt for its rock salt mines, known since ancient times. The second largest mine in Europe, with a thousand-year history of extraction, continued until 1976. Today, it remains a site of industrial archaeology that has been successfully restored, reconstructing the town's economic and social history. The Arbëreshë culture and the presence of the rock salt mine have shaped the identity of a people who still maintain unique culinary traditions and dishes. A community proud of their local produce, such as vegetables, oil, honey, a special braided white bread, and various types of homemade pasta: dromesat, a recipe from the 1400s, and shtridhelat, which requires skill and experience to make.
