For brothers Bibo and Serko Junaid, it's almost 24/7 all about the perfect döner kebab. This quick meal of flatbread, meat, and salad is one of the most popular fast-food options in Germany. Bibo and Serko have written a remarkable success story: The Junaid brothers come from northern Iraq. As children, they fled to Germany with their family and grew up in modest circumstances in Hanover. In 2007, Bibo and Serko opened a small two-man snack bar in the List district and turned it into a thriving business with 25 employees. ... You can find this and other documentaries in the ARD Mediathek: https://www.ardmediathek.de/dokus The doner kebab makers are at work almost around the clock: At 6:00 a.m., the "salad cutter" starts preparing the greens, the first customers arrive at 10:00 a.m., and the line rarely lets up until 11:00 p.m. Tradesmen, businessmen, and later, partygoers: everyone eats doner kebab. Which bread, veal or chicken, with or without onions: every request is handled according to a sophisticated system. "We want to be fast!" says Bibo. He works the early shift, and his brother Serko takes over in the afternoon. They have the meat spits made according to their recipes by a wholesaler in Berlin, but Bibo wants to switch to a regional producer and is working with them to refine the recipe. "The most important man for us is our baker, Siaband. Without his good bread, the doner kebab wouldn't be the same!" says Bibo. Finding good bakers is difficult, the job is stressful, and it's hot. Siaband constantly slides flatbreads into the oven. His young colleague Azad will soon be helping him. He's already mastered the wrap-like dürüm. "But the classic flatbreads are the ultimate challenge!" says Bibo Junaid. The döner brothers have to hold their own against growing competition, as many new döner restaurants have opened in Hanover in recent months. "The North Report" immerses itself for 24 hours in the bustling world of döner makers and tells exciting stories amidst flatbread and spicy sauce.
