Doña Concha was a cook at heart, a tireless fighter, and a pioneer of seafood cuisine in Manzanillo. In difficult times, when caguama was banned in the 1990s, she didn't give up. Instead of giving up cooking, she reinvented one of her most beloved dishes: caguama birria, which she transformed into the now iconic tuna salpicón. Today, that dish is not only a symbol of the restaurant, but also a living piece of the port's history. We spoke with Dani, her granddaughter, who continues to proudly carry on her grandmother's legacy. This is a story of cooking, resilience, and love for tradition.
