Start your day with this nutritious, gluten-free Rice Moong Lauki Pancake – a delicious blend of rice, moong dal, and fiber-rich bottle gourd (lauki). Perfect for breakfast, lunchbox, or light dinner. Packed with protein, easy to digest, and naturally vegan! In this video, I’ll show you how to make this healthy pancake step-by-step, using simple ingredients. Great for weight watchers, diabetics, or anyone looking for a tasty way to include lauki in their diet! ✅ Ingredients: 1 cup raw rice ½ cup moong dal 2 cups grated Lauki (bottle gourd) 1 medium onion, chopped 1 green chili, chopped 1 inch ginger, grated or chopped 1 sprig curry leaves, chopped Few coriander leaves, chopped 1 tsp cumin seeds (jeera) ½ tsp pepper powder ½ tsp baking soda 1.5 tbsp sesame seeds Salt to taste 1 to 1.25 cups water (use Lauki water + normal water as needed) ✅ Method: 1. Soak rice and moong dal together after rinsing. Let soak for 1–2 hours. 2. Grate Lauki, add ½ tsp salt, mix well, and set aside. 3. Chop onion, green chili, ginger, curry leaves, and coriander. 4. Dry roast sesame seeds till golden. Set aside. 5. Squeeze Lauki and reserve the water for grinding. 6. Drain and grind the soaked rice & moong with Lauki water + extra water to make a smooth batter (medium-thick consistency). 7. In a bowl, mix: The batter Cumin, pepper, chili flakes, baking soda, and salt Squeezed Lauki Chopped veggies Roasted sesame seeds 8. Heat a cast iron pan, grease with oil. 9. Pour 1.5 ladles of batter and spread gently. 10. Cover and cook for 1–2 minutes, then flip and cook the other side till golden. 11.
