Belizean Dukunu

Growing up in Belize, the first thing that comes to your mind when you hear about “Green Corn” is “Dukunu”. People go crazy over Dukunu! I can’t find any Green Corn where I live but I’m making it work with what I have. ⬇️⬇️⬇️ RECIPE BELOW ⬇️⬇️⬇️ 👩🏻‍🍳 BELIZEAN DUKUNU 6 ears sweet corn (about 6 ½ cups kernels) 7 tablespoon margarine 1 ¾ teaspoon salt 1 ¾ cups fine cornmeal *Be sure to measure out the kernels after you cut them off the cob. This will determine how much margarine, salt and cornmeal to add. For every cup of corn add (1 tbs. margarine, ¼ tsp. salt and ¼ cup cornmeal). If I don't have an even number of cups, I always round up to the next cup. For this recipe I had 6 1/2 cups of corn so I just added margarine, salt, and cornmeal as though I had 7 cups of corn.
