This does not cost you extra. _____________________________________________________ Instant Pot BBQ Beef Sandwich Recipe Serves: 8 Ingredients: 3 lb. Boneless chuck roast 3 T extra virgin olive oil 2 C low-sodium beef broth 2-3 T Dr. J’s all-purpose seasoning (recipe below) ½ red onion, sliced 1 bay leaf Kosher salt Homemade BBQ sauce (recipe below) Cut the roast into four equal sized portions. Season liberally with kosher salt. Now, season all sides with all-purpose seasoning. Press sauté’ “normal” on the Instant pot. Add the olive oil to the pot. When the Instant Pot reads “hot”, add half of the beef to the pot and sauté’ till browned on all sides. Take out and set on a plate. Repeat with the rest of the meat. Add the beef broth to the pot and scrape up all the brown bits on the bottom. Hit the cancel button. Place the beef back into the pot along with the bay leaf. Top with the sliced onions. Place the cover on the Instant Pot. Press pressure cook “more”. Set for 60 minutes. When the timer goes off, let the pot natural release for 10 minutes. When 10 minutes is up, press the release valve to let out all the pressure from the pot. Take the cover off and remove the beef to a large bowl. Discard the liquid in the pot. I like to shred my beef using two forks. I also will remove any excess fat at this point. You are now ready to add your BBQ sauce and mix all together (add as much sauce as you enjoy). Note: I like to serve mine on a toasted bun. You could also serve this over rice. Sweet and Tangy BBQ Sauce Recipe 1 C ketchup ½ C light brown sugar ¼ C apple cider vinegar 2 T honey 1 T Worcestershire sauce 1 T dry mustard 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. smoked paprika 1 tsp. kosher salt 1 tsp. ground black pepper Place all ingredients into a small saucepan. Heat to a boil and then lower to a simmer. Simmer the sauce for 15 minutes. Let this cool completely before serving. Dr. J's All-Purpose Seasoning Recipe Makes: approx. 1 ½ C 2 T smoked paprika 2 T Paprika 3 T Ground black Pepper 3 T Garlic Powder 3 T onion Powder 2 T dried oregano 2 T dried Thyme 1 T ground cumin 1T ground coriander 2 T Kosher salt Put all ingredients into a mason jar and shake. This seasoning is great on just about anything. This can be stored in your spice cabinet up to a year.
