Hur du röker fisk i en ABU-rök - Bästa knepen! / How to use an ABU Garcia Smoker

Have you ever wondered how to best smoke fish in a smoke box? Or have you tried smoking and not succeeded so well? Join me as I show my special tricks with an ABU Garcia smoker to get the fish smoked properly and not steam-cooked with a smoky taste... What you need: • Smoker. I use the classic ABU Smoker in the original model. Small and handy, easy to transport. There are also larger smoker models available. Best suited for home use, especially when you want to smoke more or larger fish. • Smoke chips. Optional purchased chips work great. But feel free to experiment with some juniper or more flavorful woods like fruit trees or hickory. • Alcohol for the burner. 95% denaturated alcohol or methanol/ethanol mixed alcohol both work, I usually use the denaturated one which although produces more soot, is a bit more efficient so it requires less. • Something to light with. • Aluminum foil to reduce flame and achieve lower temperature. • Water to dilute the alcohol. Also to achieve a lower temperature. An additional benefit is that it produces less soot and requires less alcohol. • Something to handle hot newly smoked fish with; a pair of forks works fine. • Salt - I use coarse salt, but regular salt works too. You can salt the fish just before smoking. But if you have the opportunity to salt the fish the night before and let it sit in the fridge overnight, you'll get an even better result. • Something to place the finished smoked fish on. • Something to keep track of time with. • Last but not least - Fish of course! I'm smoking whitefish today, but also perch, grayling and trout work great. Maximum size is about 600 grams. Of course, you can also use fillets of larger fish, but then adjust the smoking time according to the size. Remember: • Fireproof surface! I use a few concrete slabs. • These are hot items! • Burning flame is almost invisible! Check with a blade of grass, piece of paper. • Make sure the burner has extinguished before adding more alcohol! Don't wait too long to clean the smoker...
