Ingredients List For the Salad • ½ bowl quinoa • 1 medium onion (finely chopped) • 1 medium tomato (finely chopped) • 1 red bell pepper (finely chopped) • 1 cucumber (finely chopped) • 2 tsp finely chopped coriander leaves • 2 tsp finely chopped mint leaves • Juice of 1 lemon • Salt as per taste For the Creamy Mint Dressing • 4 tsp hung curd • 2 tsp olive oil • Juice of 1 lemon • 2 tsp coriander leaves • 2 tsp mint leaves • A pinch of salt • ¼ tsp black pepper Procedure Step 1: Cook the Quinoa 1. Take ½ bowl quinoa and rub it well while washing. 2. Wash it properly 2 times. 3. Add the quinoa to a pressure cooker. 4. Add double the quantity of water. • Example: For ½ bowl quinoa, add 1 bowl water. 5. Pressure cook for 3 whistles. 6. Let it cool slightly. Your fluffy quinoa is ready. Step 2: Prepare the Salad 1. In a mixing bowl add: • Onion • Tomato • Red bell pepper • Cucumber • Coriander leaves • Mint leaves 2. Add a little salt and lemon juice. 3. Mix everything well. Step 3: Make the Dressing 1. In a mixer jar add: • Hung curd • Olive oil • Lemon juice • Mint leaves • Coriander leaves • Black pepper • Salt 2. Blend everything until smooth and creamy. Step 4: Final Mixing 1. Add cooked quinoa to the vegetable mixture. 2. Pour the creamy dressing on top. 3. Mix gently. 4.
