CRUNCHY KETO BISCOTTI - Better than Starbucks?

No Longer a Secret - These are the BEST KETO Biscotti I've Ever Made! If you've been missing coffee shop treats on KETO, these incredible KETO Chocolate Chip Almond Biscotti are about to become your new favorite indulgence! Perfectly crunchy, lightly sweet, and loaded with toasted almonds and rich chocolate chips, these classic Italian-style cookies are made completely low-carb and gluten-free. They're sturdy enough for dunking in your morning coffee, afternoon tea, or even a cup of hot chocolate on a chilly day. I was surprised to discover I hadn’t filmed this recipe yet, though I wasn’t trying to keep them a secret! Well, now the secret is out… Unlike many keto cookies that stay soft, biscotti are intentionally baked three times to create that signature crisp texture we all know and love. The combination of almond extract, vanilla, toasted almonds, dark chocolate chips, and white chocolate chips makes every bite taste like something from your favorite bakery. Whether you're looking for a keto dessert, low-carb snack, or something special to enjoy with your coffee, these biscotti prove once again that living keto never has to feel restrictive. Crunchy. Chocolatey. Satisfying. And under 2 net carbs each! Ingredients 1. 2 eggs beaten 2. 8 tbsp butter melted 3. 1/2 cup Brown Sweetener (I use Monkfruit w/Allulose) 4. 1/2 cup White Allulose Sweetener 5. 2 tbsp protein powder unflavored (I used NOW Egg White Protein Powder, unflavored.) 6. 1 tsp baking powder 7. 1 tsp xanthan gum 8. 1/2 tsp salt 9. 1 tsp almond extract 10. 1 tsp vanilla extract 11. 1.5 cup almond flour (You can add additional flour, 1 Tbsp. at a time, until dough holds together well, as seen in video.) 12. 1/2 cup toasted almonds, sliced 13. 1/2 cup dark chocolate sugar-free chips. I prefer #ChocZero (link below.) 14. 1/2 cup white chocolate sugar-free chips Instructions 1. Preheat the oven to 325*F. Prepare a large baking sheet with parchment paper. 2. Beat the first 10 ingredients and mix until blended. (All EXCEPT the Almond Flour, chocolate chips, and sliced toasted almonds.) 3. Add in the Almond Flour and beat until blended and creamy. 4. Fold in the toasted sliced almonds and both kinds of chocolate chips. Blend until combined. 5. Place the dough on the baking pan (lined with parchment.) 6. Spread the dough to form a rectangle about 10” x 6.” Keep the height uniform. (Thinner edges can burn.) 7. Bake for 30 minutes. Cool for 20 minutes. Once cooled, slice into 28 pieces – 14 vertical slices and 1 horizontal slice, cutting the cookies in half. 8. Gently turn the biscotti over or onto a side. Bake another 15 minutes. 9. Remove from oven and allow to cool before handling. Gently turn each biscotti over onto the other side and bake another 10 minutes. (55 Minutes total baking time.) 9. Cool completely. Store in a canister. Can be frozen in a FoodSaver bag for several months.
