Savory Gluten-Free Yogurt Cake Ingredients 3 Greek yogurts (140 g each) 3 eggs 200 g Universal Gluten-Free Flour 1 packet baking powder 200 g grated hard cheese (Edam, Gouda, or Cheddar) 50 ml olive oil 100 ml milk 2–3 red onions, sliced into rings 1 tsp salt ½ tsp ground black pepper 1 tsp dried oregano or dried chives (to taste) Instructions Preheat the oven to 180°C (356°F) using top and bottom heat. Grease a round baking pan with butter and dust it with gluten-free flour, or line it with parchment paper. In a large bowl, whisk the eggs and Greek yogurt until smooth. In a separate bowl, combine the gluten-free flour, baking powder, and salt. Gradually add half of the dry ingredients to the yogurt mixture. Pour in the olive oil and milk, then add the remaining dry ingredients. Mix just until a smooth batter forms. Fold in the grated cheese, sliced onions, and herbs until evenly combined. Pour the batter into the prepared pan and smooth the top. If desired, sprinkle a little extra grated cheese over the surface. Bake for 35–40 minutes, or until the top is beautifully golden. Let the cake rest for 10–15 minutes before slicing. Cut into squares and serve warm or cold. It pairs perfectly with a fresh vegetable salad.
