Add butter and olive oil to an uncoated pan and heat until the bubbles disappear. 7. Place the eggplant flesh side down and grill thoroughly until browned. 8. Remove the eggplant, sauté the onion, chili pepper, and garlic, then pour in the sauce and emulsify. 9. Arrange the sauce and vegetables on a plate first, then place the eggplant on top. 10.
