TARTALETA de LIMÓN y MERENGUE VEGANO | Living Like A Panda
Today's recipe is a LEMON PIE with #veganmeringue which is delicious. It's a recipe #glutenfree, and very fresh with citrical flavor and the sweeteness that meringue adds to the pie. All of the ingredients are easy to find and also, the process to do the recipe is very fast, it's a recipe that you'll be able to do in just one day! BASE: Ingredients: 125g almond flour 400g Oatmeal 90ml coconut oil 120ml Agave syrup 1/2 tsp of salt · Mix all ingredients in a large bowl with a spatula. · When you see that it is difficult to mix, use your hands and knead a little until you have a large ball that does not stick to you. · Place the dough on a baking sheet. We use a removable metallic one about 28 cm in diameter. · Flatten the dough with your hands and against the walls until they are all covered. The edges can be left natural if you see that they are left over, but you can also cut them flush with a knife and with the dough that is left over to make cookies. · Finally we are going to prick the dough with a fork several times, in this way we will prevent it from swelling with the heat and making a bubble. · Bake for 10 to 20 minutes at 180ºC. When you see the golden mass remove it from the oven. · Let it warm for a few minutes before setting the next level. LEMON CREAM: INGREDIENTS: the zest of 3 lemons The juice of those 3 lemons 400ml Rice milk 250ml Agave syrup 1/2 tsp Turmeric 70g Fine corn flour · Grate the lemons directly into the saucepan where we are going to heat the mixture. Squeeze them and remove the juice. · Add the rest of the ingredients and move well with some rods until there are no lumps. · We are going to use turmeric as a natural dye to give it a more intense yellow color. · We take it over low heat while stirring so that it does not stick to us. · In a matter of 5 minutes you will see how the dough thickens. Do not stop stirring until you have a creamy mixture. · Remove from heat and serve by covering the bottom of the tart with a spatula. · Reservation. VEGAN MERENGUE: INGREDIENTS: 150ml Aquafaba (chickpea stew water) 180g icing sugar 1/2 tsp Vanilla You will freak out when you see how easy it is to make meringue #withoutegg · In a large bowl add the fresh aquafaba, which has been in the fridge for at least 30 minutes. Aquafaba is the liquid of stewing chickpeas. You can also use the liquid from the chickpeas that already come stewed in a pot. · Add the vanilla. · We are going to beat with electric rods. When we made "VEGAN CLOUDS" ( • MARSHMALLOWS VEGANOS (SMORES al final) | L... ) we used some manual rods and it took a long time to assemble it. We had to take turns between the two because our arms were already hurting. So this time we will do it with electric ones. That yes, we had a great time the other time hahaha · After spending a few minutes beating you will see how it first creates foam. · After a few minutes the mixture turns almost white but is still liquid. · After a few minutes it is taking shape and it is thicker. Be patient because riding MONTA ^^ · When you already separate the mixer and it forms a peak and does not fall (watch the video so you can see what we mean), it is ready. · Now it's time to sweeten it, and we are going to do it with icing sugar. So little by little we are going to add the sugar and beat. Every time we add sugar we beat for 1 minute. · And ready, we already have our vegan meringue. · Finally we put it on the lemon layer of the tartlet. You can pour it and crush it or also, as we did, shape it with a pastry bag. · The ideal would be to have a reusable sleeve. We fill it with meringue and we are going to make meringues over the entire surface, covering the lemon cream. · OPTIONALLY we wanted to give it a toasty appearance on the surface so with a torch we burn the meringues a little. Don't see what it smells like toasted clouds. Delicious! If you use a torch be careful because it heats up a lot. · It only remains to cut a piece and enjoy this delicious lemon and meringue tartlet.
