Kyria is an organic farmer and chef in Montjoie-en-Couserans, Ariège, where she and her husband Manu created Les Champs de Gaya (the farm) and La Table de Gaya (the restaurant), the first 100% farm-to-table restaurant in France, starting from scratch and without subsidies 10 years ago 👩‍🌾 The farm produces vegetables, fruit, five varieties of meat, eggs, honey, and herbs.
