Mangold gefüllt: Kartoffel-Feta Füllung mit cremiger Kräuter-Tomatensoße

Inspired by Blitva, I stuffed this Swiss chard with potatoes and feta. Served with a creamy tomato sauce, these Mediterranean Swiss chard rolls are simply perfect. Simple, yet brilliant. ⇨ Ingredients for 3-4 servings: 8 Swiss chard leaves 400g potatoes, preferably waxy 2 cloves of garlic 1 can of crushed tomatoes 3 bay leaves 1 tsp oregano 1/2 bunch of parsley 2 x 100g feta cheese fresh rosemary olive oil salt & pepper ⇨ Preparation: Sauté the garlic cloves in olive oil. Deglaze with the crushed tomatoes and add a little water. Season with 3 bay leaves, 1 tsp oregano, chopped parsley, salt & pepper. Simmer for 20-30 minutes. Remove the stems from the Swiss chard and cut the potatoes into small cubes. Blanch the Swiss chard in boiling water, then cook the potatoes in the same water for 6-8 minutes. Drain the potatoes and season with olive oil, 100g feta cheese, rosemary, salt, and pepper. Fill the blanched Swiss chard with 1-2 tablespoons of the potato-feta mixture and roll it up. Remove the bay leaves from the sauce and crumble in 100g of feta. Once the feta has melted, warm the Swiss chard rolls in the sauce or serve them directly on a plate with the sauce.
