Are antinutrients bad? Should we really avoid legumes, whole grains, seeds, or nuts because they contain phytates, lectins, saponins, or oxalates? In this video, I want to debunk one of the biggest myths in nutrition today: the fear of antinutrients. Because what many people call "antinutrients" can become a wonderful tool for taking care of your health if you know how to prepare and cook food correctly. Antinutrients are substances present in many plant-based foods, especially legumes, whole grains, seeds, and nuts. They can hinder the absorption of some minerals like iron, calcium, zinc, and magnesium, but here's the important part: Most of them can be reduced or neutralized with traditional cooking techniques. Techniques that our grandmothers knew very well: ✔ Soaking ✔ Proper cooking ✔ Roasting ✔ Fermentation The problem isn't legumes, whole grains, or seeds. The problem is that we've lost culinary knowledge, and we hear more and more about nutrients, superfoods, and supplements, but very little about how to cook properly so that food is digestible, easily absorbed, and truly therapeutic. In this video, we'll see: ✔ What antinutrients are; ✔ Which foods contain phytates, lectins, saponins, oxalates, tannins, and glucosinolates; ✔ Why antinutrients have such a bad reputation; ✔ How to reduce them with traditional cooking techniques; ✔ Why phytates can have antioxidant benefits; ✔ How they relate to glucose, cholesterol, fatty liver, kidney stones, cardiovascular health, osteoporosis, and metabolic health; ✔ Why legumes, whole grains, and seeds shouldn't disappear from your diet; ✔ And why the new nutrition begins in the medicinal kitchen. I'll also talk to you about something very important: it's not enough to know which foods are "healthy." You have to know how to prepare, cook, season, and combine them so your body can truly benefit from them. Because therapeutic nutrition doesn't begin with a list of forbidden foods. It begins in the kitchen, over the heat, with soaking, with cooking... With traditional techniques that transform food into a real tool for health.
