Welcome to Pizza Lupo in Louisville, Kentucky. This restaurant was named 'Best Pizza' by locals for multiple years despite it being a relatively new place in town. It serves delicious and authentic Neapolitan pizza prepared in a 900-degree wood-fired oven while also highlighting local ingredients in both their pizzas and other dishes. I sat down for a conversation (and ate two pizzas!) with Owner and Executive Chef Max Balliet to discuss his life-long love of pizza and his mother's strong cooking influence that has shaped his career.
