Remove the tough outer leaves and cut off the tips until you're left with just the tender heart. Remember to also remove the inner "beard." Preliminary cooking: Bring a pot of salted water to a boil, adding a lemon slice (this prevents them from browning!). Add the artichokes and cook for about 20-25 minutes until tender.
