BUDIN DE CALABAZA NAVIDEÑO RIQUISIMO Y MUY FÁCIL

One of those recipes that always comes in handy is Irresistible, perfect for any special occasion and especially excellent for Christmas. It's a unique pudding recipe that everyone will love and is very easy to make. INGREDIENTS: FOR THE CARAMEL: 110g sugar for the caramel = 1/2 cup = 6 tablespoons 1 18cm diameter cake tin with or without a hole in the center FOR THE PUDDING: 500g cooked pumpkin 6 eggs 60g melted butter = 3 tablespoons 40g all-purpose flour = 2 tablespoons 1 cup sugar = 220g = 12 tablespoons 1 teaspoon vanilla extract PREPARATION: Remove the skin and seeds from the pumpkin and cut it into chunks. Cook it in water with a pinch of salt until very soft. Drain the water completely and mash it slightly. We begin by placing the sugar for the caramel in the same mold. Let the sugar melt without stirring, coat the sides of the mold with the hot caramel, and set aside. In a bowl, add the cooked pumpkin, eggs, sugar, flour, melted butter, and vanilla extract. Mix everything very well with a mixer until you achieve a creamy texture, or you can do it in a blender; put everything in the blender and blend. Pour the mixture into the mold and set aside. In a large pan or baking dish filled with water, place the mold in the center and bake in a preheated oven at 180°C (350°F) in a water bath for approximately 1 hour. After that time, check if the pudding is cooked through, and if necessary, let it rest a little longer in the oven. Then remove from the oven, let cool, and unmold. Or, place the mold in a large pot of water on the stove and cook in a water bath for 1 1/4 hours, making sure there is always water in the pot. Turn off the heat and leave the mold in the pot until lukewarm. Remove from the pot, let it rest until it reaches room temperature, and unmold.
