Soft and Fluffy Apple Muffins | Easy Homemade Recipe

Welcome to my channel! Today, I’m excited to share a delightful Apple Muffin recipe with you. These soft and fluffy muffins are filled with sweet, buttery apples and topped with a light dusting of icing sugar, perfect for breakfast or a cozy afternoon treat! Let’s get started! 🍎 Ingredients (Apple Muffins): For the Apples: 15 g (1 tbsp) butter 1 medium apple, sliced 10 g sugar (2 tsp) 10 ml lemon juice (2 tsp) For the Muffin Batter: 1 large egg, room temperature 1/2 tsp vanilla 70 g sugar (1/3 cup) 25 ml milk, room temperature (about 1.5 tbsp) 56 g melted butter, cooled (1/4 cup) 100 g all-purpose flour (about 3/4 cup + 2 tbsp) 1/2 tsp baking powder 1/4 tsp salt Topping (Optional): Icing sugar 🧁 Prepare the Apples: Melt 15 g of butter in a pan over medium heat. Add the sliced apple, 10 g sugar, and 10 ml lemon juice. Stir occasionally until the apples soften and become slightly golden. Set aside to cool. 🧁 Prepare the Muffin Batter: In a mixing bowl, beat 1 egg, 1/2 tsp vanilla and 70 g sugar for 2–3 minutes until light and creamy. Add 25 ml milk, and 56 g melted butter. Mix well. Sift in 100 g flour, 1/2 tsp baking powder, and 1/4 tsp salt. Mix on low speed for 15–20 seconds, just until combined. 🧁 Assemble & Bake: Preheat your oven to 350°F (175°C). Spoon the batter into muffin cups, filling them about 2/3 full. Place the cooled apple slices on top of each muffin. Bake for 25–30 minutes, or until a toothpick comes out clean. Let the muffins cool slightly, then dust with icing sugar if desired.
