Plus, we are taking the flavor to the peak with an orange sauce. With this recipe, you will be able to make a perfectly measured Pavlova with the right consistency, without experiencing the much-feared cracking problem. Recipe Content & Ingredients: For the Pavlova: 4 egg whites 220 grams granulated sugar 1 tablespoon lemon juice 20 grams cornstarch For the Orange Sauce: 3/4 cup orange juice 1/2 lemon, juiced 4 egg yolks 100 grams granulated sugar 100 grams butter For Serving: 1 cup heavy cream Fresh fruits Fresh mint leaves Powdered sugar Instructions: First, whisk the egg whites in a large bowl until foamy. Gradually add the granulated sugar to the foam and continue whisking at high speed until it becomes smooth and stiff. Add the lemon juice and remove from the mixer. Finally, add the cornstarch and fold in with a spatula. Transfer the mixture onto a tray lined with parchment paper and shape it into a wide ballerina skirt or any other form you desire. Preheat the oven to 130 C (no fan). Place the meringue into the hot oven, wait ten minutes, then lower the temperature to 100 C and bake for another 90 minutes. Do not open the oven door when the time is up. Turn off the oven and wait 3-4 hours until it cools down completely. Prepare a bain-marie setup for the sauce. First, whisk the sugar and egg yolks constantly until the foam disappears. Then add the lemon juice and orange juice. As the mixture warms up, gradually add the butter and whisk. Then, put the mixture in the refrigerator. Whisk again before serving. Whisk the heavy cream with a mixer for serving. Before serving, gently press down on the center of the meringue to create an indentation. Place the meringue on your Porland plate, pour the orange sauce into the center, top with the whipped cream, and serve with fresh fruits, mint leaves, and a light dusting of powdered sugar of your choice. Enjoy! Tip: Never open the oven door while the meringue is baking and let it cool inside the oven. That is the secret to the perfect result!
