The safest and most valuable way to cook chickpeas, from a culinary and medicinal perspective, is boiling. Cooking instructions for boiled chickpeas: Rinse the beans thoroughly under cold water. Cover with water in an enamel saucepan. Let them soak for 10-12 hours. Drain the water, rinse the chickpeas again. Cover with water again, and return to the stove. Bring to a boil and simmer until tender. This will take 45 to 60 minutes. Skim off any foam that forms during cooking. Chickpeas pair well with almost any food (especially vegetables and meats, herbs, and garlic). Numerous delicious recipes have been developed using chickpeas. They are an integral part of Eastern cuisine (hummus, falafel). Chickpeas can be used to make pates and cutlets, cookies, various salads, pilaf, and pureed soups. It's best to avoid canned, fried, and baked chickpeas. These products contain a number of hazardous substances and have reduced nutritional value. Sprouted chickpeas deserve special attention. They contain slightly more nutrients. Sprouts can be purchased in stores or grown at home. To do this: Rinse the raw beans. Place them in a clean glass container. Cover with water until they're three-quarters full. Let them sit for at least 24 hours. The first sprouts will appear after 24 hours, and they'll be ready to eat in 3-5 days. Store the sprouted chickpeas in a tightly sealed container in the refrigerator for up to 7 days.
