NEW FACEBOOK PAGE - / backyardchefscasualkitchen NOTE: You have to answer all membership questions to join it's fully automated and accept group rules Cookie Ingredients (for 24 cookies): • 2 cups (200g) grated carrots • 2 cups (180g) rolled oats • 1 cup (96g) almond flour • ½ cup (120ml) maple syrup • 4 tbsp (60ml) melted coconut oil or neutral oil • ½ cup (70g) raisins • ½ cup (60g) chopped walnuts • 2 tsp (4g) ground cinnamon • 1 tsp (2g) ground nutmeg • ½ tsp (2g) baking soda • 1 tsp (6g) salt • 2 tsp (10ml) vanilla extract • Optional: 2 tbsp (16g) extra almond flour if dough feels sticky Firm Cream Cheese Filling (for 12 sandwiches): • 225g (8 oz) full-fat cream cheese (cold but soft enough to beat) • 60g (4 tbsp) unsalted butter (cold but pliable) • 120–140g (1 to 1¼ cups) powdered sugar, sifted • 1 tsp (5ml) vanilla extract • Optional: 1 tbsp milk powder or 1 tsp cornstarch for added firmness Oven to 350°F (175°C) Bake: 13–15 minutes until golden at the edges.
