My Daily Greens
Daily Greens 10 ounces of greens such as a mixture of kale, spinach, chard sold in bags or containers, or heads of any greens you like, washed well. Fill a bowl with water and add a cup of ice cubes. Set aside. Bring 4-5 quarts of water to a boil. Add 10 ounces of greens. Cook for 30 seconds or longer, depending on the type of greens. I use 30 seconds for the baby type greens I use, but if you use mature kale or other greens you may need a minute or longer. Test them as they cook to find the level of doneness you prefer. After 30 seconds, immediately remove with a spider tool (or drain into a colander) Immediately place the drained greens in the bowl of ice water. When cool, drain in a colander. Using a quart size bag, inside out, place all the greens inside and turn it right side out. Squeeze the bag of greens over a sink or bowl until all the water is squeezed out. 10 ounces of raw greens makes about 4, 1/2 cup servings of cooked greens. I eat one serving for breakfast drizzled with ½ teaspoon low sodium soy sauce, 1/4 teaspoon Ume plum vinegar and sprinkled with Eden Shake sesame seaweed sprinkle. I use the rest throughout the day and add them to my soup, cooked meals or just eat as a snack. Feel free to use any balsamic vinegar, liquid aminos, or other seasonings on your greens. We need 2 servings of greens per day, ½ cup raw or 1 cup cooked if we're following the Daily Dozen from How Not to Die. Instant Pot Instructions ½ cup water Place ½ bag or 12 ounces of greens in the Instant Pot. Lock lid and seal, cook on high pressure for 1 minute. Immediately release. Remove from instant pot, place in ice water and drain, squeeze and season. Greens can be cooked in a hot skillet with a little water, however reduce the amount and do it in small batches.
