Foraging and Cooking Maple Seeds

https://foragerchef.com/edible-maple-... Whirly birds, helicopters, samaras-whatever you call them many of us will have memories of them scattered around the yard and parking lots in the spring. Maple seeds are edible, with a nutrient density comparable to a pumpkinseed. They have a slightly bitter, green, leguminous taste. I'd cooked them before in smaller amounts but this week I decided to focus on harvesting a large amount to treat them as a food and see what the yield to labor ratio was, etc. What I found really surprised me, and I was able to get 8 oz of them shelled in an hour. I go into more depth on this in the video. As far as cooking, there's lots of things that you can do here, but if you try anything beyond just roasting maple seeds in a pan, you should try the dukkah I describe in the video.
