Tarta de Chocolate de Mayonesa Riquisima y Super Tierna

If you love a rich, flavorful chocolate cake, you'll definitely want to try this mayonnaise chocolate cake. Mayonnaise is added to the batter, giving the cake a wonderfully soft and fluffy texture. It doesn't need frosting, but it's delicious when topped with a smooth and creamy chocolate ganache—a simple mixture of chocolate and heavy cream. Mayonnaise cake originated during the Great Depression when people didn't have as much access to eggs and oil. Ingredients: • 250g - 2 cups flour • 85g - 2/3 cup cocoa powder • 1 tsp. 5g baking powder (such as Royal brand) • 1 tsp. 5g baking soda • 1/4 tsp. salt • 3 large eggs at room temperature • 340g - 1 2/3 cups white sugar • 2 tsp. vanilla extract • 1/2 tsp. cinnamon • 230g - 1 cup mild mayonnaise (preferably Hellmann's) • 320ml - 1 1/3 cups coffee (or water), at room temperature Chantilly Cream Ingredients: 500ml or 1/2 liter of heavy cream or whipping cream 1 1/2 tablespoons of cocoa powder 1/2 cup of sugar Preparation: • Preheat the oven to 180°C – 350°F • Grease and lightly flour two 8-inch (20cm) round cake pans or one 9 x 13 x 3-inch (23 x 33 x 8 cm) pan. Line the bottom of the pan with parchment paper. • In a bowl, sift together the flour, cocoa powder, ground cinnamon, baking powder, baking soda, and salt. • In another bowl, beat the eggs with the sugar and vanilla extract at high speed until light and fluffy (about 3 minutes). • Reduce the speed and add the mayonnaise until combined. • Alternately add the flour mixture (in three parts) and the coffee (in two parts), beginning and ending with the flour. • Pour the batter into the pan, smoothing the top with a spatula. • Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean (the sides of the cake will begin to pull away from the sides of the pan). • Let cool for about 5 minutes before removing from the pan. • Place the cake on a wire rack to cool completely before frosting.
